Ten ramen shops sit together on the tenth floor of Kyoto Station Building, each with its own seating. The regions are the point: Sapporo miso, Yamagata wonton ramen, Toyama black, Tokushima pork-and-soy with a raw egg, and thin Hakata noodles. The Yamagata shop, Mangetsu, took first place in a national local-ramen vote in 2023. Toyama's Menya Iroha has taken first place at the Tokyo Ramen Show five times. Kyoto's own UNO Ramen makes gluten-free vegan bowls from soy milk, and sells ramen desserts.
