Basics

Champon was invented here in 1899, for Chinese students living in Nagasaki, on pork and chicken broth with whatever the local sea and hills gave. Saraudon came out of the same kitchen, and comes two ways: soft thick noodles in sauce, or thin ones fried crisp. Order the thick ones for a child who cannot manage hard noodles. Lunch stops taking guests at 14:30, earlier when busy, so arrive before 14:00. From 15:00 to 17:00 the dining room shuts; the ground-floor shop stays open to 17:30.
